I remember eating those back in the day. I also remember that I didn't like it with jelly and either ate them plain or with ketchup. I don't think I ever tried it with maple syrup. I may have to fry some up as an alternative to the usual pancake or waffle breakfast I like to cook the kids on the weekend.

I do the same thing! I always make extra mashed potatoes so I can make these pancakes the next day. They are so good! I also make extra mashed potatoes so I can freeze some and always have them on hand. It is possible I have a problem ;)

Oh man, all you need is a dollop of creme fraiche, and caviar (or salmon roe) on top of those babies for a fun, decadent treat.

I've started reading this blog and it's provided not only a bunch of recipes I'd like to try, but a welcome respite form all of the political blogs I've been reading. Thanks.

I wonder if you try corn flour instead of corn meal if the result would be any different? Could be that the corn meal was too gritty, but corn flour is a finer grind so might work better. Just a thought, but maybe worth trying since it sounds like a good combination.

What a great idea and the perfect size. I love the use of the leftover mashed. Thank you for this.
